Okay, so I'm running a little late on the days of baking. Stomach flu struck our house (just the kids so far--fingers crossed), and I didn't want to bake in a House of Germs.
These coconut bars were wonderfully easy and incredibly delicious. Even B, who doesn't really like coconut, liked them. I had a hard time keeping J (and myself) out of them (M refused to eat his dinner and didn't get any). Next time I'll make a double batch.
